What is Histamine?

Histamine is a biogenic amine derived from the breakdown (decarboxylation) of the amino acid histidine. It is involved in the body’s inflammation response and, if elevated levels are ingested, it can produce symptoms similar to that of an allergic reaction. Histamine poisoning is also referred to as Scombroid poisoning.

A wide variety of bacteria, which are commonly found in aquatic environments are involved in producing histamine including; Morganella morganii, Klebsiella spp., Pseudomonas, Clostridium, Citrobacter freundii. 

Histamine management 

Control of histamine is through strict adherence to an unbroken cold chain, from catch to consumption. The highest risk is presented upon catch and preparation for sale. The bacteria mentioned above can survive smoking, brining, salting and fermentation processes as they are either halotolerant or halophilic (thriving in salt rich environments) with some being able to produce histamine in low pH environments.

The regulations around limits of histamine in fish and other foods vary in different countries, making analysis particularly important for seafood exporters to ensure that their product is compliant. The symptoms of histamine can be triggered from levels as low as 50 mg/kg (ppm)
